IHOP Harvest Grain ‘n Nut Pancakes

Preparation Time: 10 minutes

Cooking Time: 45 minutes

Servings: 4

Ingredients:

3 tablespoons of finely chopped walnuts

3 tablespoons of finely chopped blanched almonds

¼ cup of granulated brown sugar (you can use regular sugar if you wish)

2 eggs

¼ cup of vegetable oil

⅓ cup of whole milk

1 ¼ cups of buttermilk

½ teaspoon of sea salt

1 teaspoon of baking powder

2 teaspoons of baking soda

⅓ cup of all-purpose flour

¾ cup of whole wheat flour

¾ cup of Quaker oats

Directions:

1) Lightly coat a frying pan with vegetable oil and place it over medium heat.

2) Use a food processor or blender to grind the oats until they look like flour.

3) In a medium bowl, mix the oat flour, all-purpose flour, whole wheat flour, baking powder, baking soda, and sea salt.

4) Use another bowl to blend the oil, milk, buttermilk, eggs, and granulated sugar until you get a smooth mixture. You will need an electric mixer for this job.

5) Mix the wet and dry ingredients. Add the nuts and stir well by hand.

6) Take ⅓ cup of the batter and place it in the frying pan, and cook it for 1 to 3 minutes per side, or until it gets brown.

7) When all of the pancakes are cooked, you can serve with maple syrup or a topping of your choice.

Tip: Make sure the nuts are evenly chopped so that you don’t bite into any large ones.
